We use a special technique with roasted salt to compliment our many dishes. The salt is roasted at 400 degrees to evaporate the potentially harmful substances and to keep the beneficial elements. The result is a hint of salt flavour which brings out the purest taste of the fish,

providing a rich and moist finish.
